Middle East Spice 


Makes about 1/2 cup

This is the trade mark of Middle Eastern spices. The proportions, and list of ingredients vary from region to region (or from spice shop to spice shop), but the basic recipe is the same. Grind several servings at one time and keep the mixture in the freezer. Use portions as you need them.
4 Tablespoons ground allspice
1 Tablespoon ground black pepper
1 Tablespoon ground cinnamon
1 Tablespoon ground nutmeg
1 teaspoon ground cardamom
1 teaspoon ground cloves
1 teaspoon ground ginger
1 teaspoon ground dried rose petals

  1. Combine all ingredients, mix well. Grind with a spice grinder until fine.

To make a larger amount of spice, double, or triple the ingredients.
To keep spice fresh, keep in a closed container in freezer.
