Juicy Stringbeans

Serves 4

Fassoulia
A simple, but delicious vegetable side dish. May be made with fresh or frozen beans. Chunks of cooked lamb are sometimes added to this dish.
 
Ingredients
10 ounce package French-cut string beans
1 small onion, chopped
1/2 green pepper, chopped
1/4 cup fresh parsley, chopped
2 Tablespoons butter
1 15 oz can tomatoes, crushed.
1/2 cup water
1/2 teaspoon mint
 salt and pepper
 
Preparation
  1. Partially cook stringbeans.
  2. Saute onion, pepper and parsley in butter.
  3. Add tomatoes, water, mint and cooked beans.
  4. Simmer for 15 minutes
  5. Add salt and pepper to taste.
